La oveja xalda es la raza autóctona de Asturias, mi tierra. Hay constancia de la existencia de la xalda desde el siglo VI a.C. gracias a restos arqueológicos de los castros astures. Desde 1940 se encuentra en peligro de extinción y a partir de los años 90 empieza su recuperación. Esta es mi pequeña aportación para ayudar a conservarla y convertirla en un producto memorable y de alta calidad.

The Xalda sheep is the native breed of Asturias, my homeland. There is evidence of the existence of the Xalda since the 6th century B.C. thanks to archaeological remains of the celtic Asturian forts. It has been in danger of extintion since 1940 and began its recovery in the early 90s. This is my small contribution to try to preserve it and turn it into a high quality, memorable product.
